The Big Corn on the Cob Debate

Alright - I've apparently fallen into some sort of blogging funk. There's a lot I want to write about - but then I go and read everyone else's blogs and you all are already talking about much of what I'm thinking - and doing a much better job of it then I would. So I decided to change things up a bit. This is, The First Ever (and quite possibly the last), recipe posted here at McCathy's Tub. I hope you enjoy.

Corn on the cob. Who doesn't like it? Seriously. To me crunching into an ear of corn means that summer is in full swing. My summer childhood memories are filled with sitting on the back porch with my dad and huskin' the corn so that my mom could boil them for what seemed like forever - but the wait - was oh so worth it - yummy yummy. Fast forward a couple of years to when my roomies and I would grill on our tiny Weber - around noon we'd start soaking our ears of corn in a sink full of water, then wrap each ear in some foil - without taking the husk off (when we'd remember we'd stick some pats of butter inside the husks). We'd then grill 'em for about an hour. The wait - the work - totally worth it. Yummy yum yum - and I vowed to never boil my ears of corn like my mom. Now looking back a few summers - since Quinn was born it seems my husband and I would rarely prepare fresh corn on the cob for ourselves. Who has time to think about soaking the ears - when you're worried about ear infections? Or spending an hour with something on the grill? Nope - the last few summers my encounters with corn has been limited to county fairs and festivals and BBQs at my parents house. All that has changed. My life of eating corn on the cob will forever be different.

Grilled Corn
4-6 ears of corn
6 tbl. butter
1 clove garlic
salt and pepper

1. Husk each ear of corn - you can be fancy and pull the husks back and secure with string to form a handle.
2. Place the butter and garlic in a mixing bowl and whisk or beat until smooth and creamy.
3. Brush each ear of corn with the garlic butter and arrange on the grill. (Make sure the husks are away from the fire if you chose to leave them on.) Grill the corn until the kernels are browned all over, about 8 to 12 minutes, turning and brushing with the remaining butter.
4. Remove corn for the grill and season with salt and pepper.
5. Enjoy.

wow, i never even thought of doing it like that!

You can also do it with butter and fresh parsley chopped and spread on the corn. Delicious!

Yummy! Last July when I was at my mom's place in Arkansas we ate so much corn on the cob... but I never got tired of it!
